Degustation menu presentation in Benahavis Hills Restaurant

Since June this year Hills Cafe & Restaurant in Benahavis has been delighting its diners with an exclusive degustation menu once a month at an extremely affordable price compared to others being offered on the Costa del Sol. Salmorejo spheres, Corvina ceviche, Grilled leeks with beurre nantais sauce and smoky mashed potatoes, Ajoblanco with foie gras shavings, Red mullet with manzanilla sherry foam, Morels mushrooms cooked in duxelle sauce, Grilled squab breast with Amontillado sherry sauce and rhubarb, black garlic mayonnaise… are only some examples of the “melt-in-your-mouth” dishes our Chef has concocted.

But what exactly is degustation?

“Dégustation” is (by Wikipedia) the careful, appreciative tasting of various foods, focusing on the gustatory system, the senses, high culinary art and good company. It is an extensive sampling of smaller portions of dishes of the Chef’s choosing. Chef’s are essentially artists and tasting menus can be an opportunity to get creative with different dishes and show off their skills.
